Potato Salad

Ingredients

- 6 medium potatoes
- 1 small onion, chopped fine
- 1 cup celery, chopped
- 1 teaspoon celery seed
- 1 teaspoon salt
- 4 hard-boiled eggs, diced
- 2 eggs, well beaten
- 3/4 cup sugar
- 1 teaspoon cornstarch

- 1/4-1/2 cup vinegar
- 1/2 cup cream
- 1 teaspoon mustard
- 3 tablespoons butter, softened
- 1 cup salad dressing
Recipe
- 1 potatoes: cook potatoes in their jackets until soft.
- 2 peel and dice.
- 3 mix potatoes gently with the remaining five ingredients.
- 4 pour dressing over and stir.
- 5 dressing: mix eggs with sugar, cornstarch and salt.
- 6 add vinegar, cream and mustardd.
- 7 cook until thickened.
- 8 remove from heat and beat in butter.
- 9 add salad dressing and mix until smooth.
- 10 fold into potato mixture.
