Iowa Corn Soup

Ingredients
- Servings: 8
- 1 cup sliced onion
- 1 tablespoon canola oil
- 2 tablespoons flour
- 3 cups corn
- 5 cups 2% low-fat milk
- 1/4 cup parsley, minced
- salt and pepper
Recipe
- 1 saute onion in oil in a large saucepan until tender, about 5 minutes.
- 2 sprinkle with flour and cook for 1 minute.
- 3 stir in corn and milk. heat to boiling, reduce heat and simmer for 5 minutes.
- 4 stir in parsley. season to taste with salt and pepper.
