Iowa Corn Soup

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 cup sliced onion
  • 1 tablespoon canola oil
  • 2 tablespoons flour
  • 3 cups corn
  • 5 cups 2% low-fat milk
  • 1/4 cup parsley, minced
  • salt and pepper

Recipe

  • 1 saute onion in oil in a large saucepan until tender, about 5 minutes.
  • 2 sprinkle with flour and cook for 1 minute.
  • 3 stir in corn and milk. heat to boiling, reduce heat and simmer for 5 minutes.
  • 4 stir in parsley. season to taste with salt and pepper.
