Mexicali Lamb Chops

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 tablespoon butter
  • 1 cup onion (sliced)
  • 1/2 cup diced green pepper
  • 1/2 cup diced red pepper
  • 1 (16 ounce) can tomatoes
  • 1 cup frozen whole kernel corn
  • 1/2 teaspoon marjoram
  • salt and pepper
  • 4 lean lamb chops

Recipe

  • 1 in heavy 12 inch skillet cook butter,onion and peppers about 5 minutes.
  • 2 add tomatoes, corn and marjoram and cook on high 5 minutes.
  • 3 transfer to a bowl and keep warm.
  • 4 in same skillet brown chops.
  • 5 turn down heat.
  • 6 return veg.
  • 7 mix, cover and cook on low for 15 minutes.
