Mexicali Lamb Chops

Ingredients
- 1 tablespoon butter
- 1 cup onion (sliced)
- 1/2 cup diced green pepper
- 1/2 cup diced red pepper
- 1 (16 ounce) can tomatoes
- 1 cup frozen whole kernel corn
- 1/2 teaspoon marjoram
- salt and pepper
- 4 lean lamb chops
Recipe
- 1 in heavy 12 inch skillet cook butter,onion and peppers about 5 minutes.
- 2 add tomatoes, corn and marjoram and cook on high 5 minutes.
- 3 transfer to a bowl and keep warm.
- 4 in same skillet brown chops.
- 5 turn down heat.
- 6 return veg.
- 7 mix, cover and cook on low for 15 minutes.
