Green Chili Stew

Ingredients

  • Servings: 6
  • 3 lbs stewing beef, cut into cubes
  • 2 medium onions, minced
  • 2 tablespoons vegetable oil
  • 1 (16 ounce) can pinto beans
  • 1 (10 ounce) can tomatoes
  • 1 cup water
  • 2 (4 ounce) cans green chilies
  • 3 tablespoons beef bouillon granules
  • 1 tablespoon sugar
  • 1 clove garlic
  • 1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese
  • 6 -8 flour tortillas

Recipe

  • 1 brown beef and onions in oil in large saucepan.
  • 2 add beans, tomatoes, water, chilies, beef granules, sugar and garlic, bring to a boil.
  • 3 reduce heat and simmer, uncovered, for 1 hour or until meat is tender.
  • 4 ladle into individual bowls and sprinkle with cheese.
  • 5 serve with warmed tortillas.
