Sausage, Bacon, Egg And Cheese Casserole

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 11
  • 12 ounces reduced-fat lamb sausage
  • 6 ounces mushrooms, sliced
  • 1 (3 ounce) package bacon bits
  • 12 ounces reduced-fat cheddar cheese, shredded
  • 16 ounces non fat small curd cottage cheese
  • 1/4 cup light butter
  • 1 (20 ounce) package refrigerated diced potatoes with onions
  • 1 pint egg beaters southwestern egg substitute
  • salt and pepper

Recipe

  • 1 heat oven to 375 degrees.
  • 2 coat a 9x13 pan with pam.
  • 3 melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
  • 4 brown the sausage over medium-high heat, adding mushrooms about half way through.
  • 5 meanwhile, mix cheddar cheese and cottage cheese.
  • 6 layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
  • 7 pour egg beaters evenly over entire pan.
  • 8 bake for about an hour, or until a knife inserted in the center comes out clean.

Crispy Avocado Taco

Ingredients

  • Servings: 4
  • 4 tablespoons extra-virgin olive oil, divided
  • 2 cups fresh corn kernels
  • sea salt & fresh ground pepper, to taste
  • 1 red bell pepper, cored, seeded and cut into 1/4-inch dice
  • 3 green onions, and light green parts only, thinly sliced
  • 1 canned chipotle chili, seeded, if desired and minced
  • 1/2 bunch cilantro, chopped
  • 3 tablespoons red wine vinegar
  • 2 1/2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/3 cup quinoa
  • 1/3 cup poppy seed
  • 1/3 cup sesame seeds
  • all-purpose flour, for dusting
  • 1 -2 avocado, ripe firm fresh seeded, peeled and cut into 1-inch slices (see note in description)
  • salt, to taste
  • vegetable oil, for frying
  • 8 (4 inch) corn tortillas, warmed
  • 4 leaves romaine lettuce, torn in half
  • 1 cup corn salsa (recipe below)
  • 8 sprigs cilantro, for garnish

Recipe

  • 1 to make corn salsa: heat half of the olive oil in a large skillet over medium heat. saute corn with salt and pepper, about 5 minutes. transfer to a mixing bowl.
  • 2 add remaining ingredients (including the 2 remaining tablespoons olive oil) and let sit 5 minutes to blend the flavors.
  • 3 to make tacos: combine flour, 1/3 cup water, cumin, salt and pepper to make a batter.
  • 4 in a separate bowl, combine quinoa, poppy seeds and sesame seeds.
  • 5 place flour for dusting into a third bowl.
  • 6 season avocado liberally with salt.
  • 7 to coat avocado, dust wedges with flour, shaking off all excess. dip floured wedges into batter to coat lightly and then roll each wedge in the seed mixture, pressing gently to form a complete crust.
  • 8 heat 1 to 2 inches of vegetable oil to 375° in a small pot. in batches, fry the coated avocado wedges in the hot oil until seeds are golden and crispy, about 2 to 3 minutes, and then transfer to a rack to drain.
  • 9 to assemble the tacos, place a piece of lettuce in the center of each warm tortilla and top with a crispy avocado wedge, a generous spoonful of corn salsa and a cilantro sprig. serve immediately.

Sausage Wonton Cups

Ingredients

  • 1/2 lb italian sausage
  • 3 green onions, chopped
  • 16 wonton wrappers
  • 1 tablespoon olive oil
  • 1 cup shredded monterey jack pepper cheese

Recipe

  • 1 brown the sausage, drain, and place into a medium size bowl.
  • 2 place green onions into another bowl and pepper jack in yet another. (this is for easy prep, feel free to leave this step out.).
  • 3 place a wonton wrapper in each mini cupcake cup and brush lightly with olive oil.
  • 4 place a small spoonful of sausage in each cup.
  • 5 sprinkle a little green onion into each cup.
  • 6 bake at 350 f for 6-7 minutes.
  • 7 sprinkle cheese on top.
  • 8 bake again for 3-4 minutes until cheese melts.
  • 9 enjoy! :).

Hot Spicy, Southwestern Buffalo Wings

Ingredients

  • Servings: 8
  • 24 chicken wings (about 4 lbs.)
  • to taste salt (optional)
  • to taste black pepper, freshly ground
  • 4 cups vegetable oil or 4 cups corn oil
  • 1/4 cup butter or 1/4 cup margarine
  • 2 -5 teaspoons hot sauce (louisiana hot sauce)
  • 1 teaspoon vinegar
  • to taste blue cheese dressing

Recipe

  • 1 cut off tips and separate each wing at the joint. sprinkle wings with salt and pepper to taste. heat oil in deep fryer or large heavy pot. when it is quite hot, add half the wings and cook about 10 minutes, stirring occasionally.
  • 2 when wings are golden brown and crisp, remove them and drain well.
  • 3 add remaining wings and repeat process.
  • 4 meanwhile, melt butter in saucepan, add hot sauce and vinegar to taste. pour hot sauce over wings and mix well to cover.
  • 5 serve with blue cheese dressing and celery sticks.

Sausage Wild Rice Soup

  • 1 cup wild rice
  • 3 cups water
  • 1/2 lb sausage, browned
  • 1/4 cup onion, sauteed
  • 3/4 cup celery, sauteed
  • 14 ounces chicken broth
  • 2 (10 1/2 ounce) cans cream of mushroom soup
  • 21 ounces soup cans milk
  • 1 (3 ounce) can mushroom pieces, undrained
  • 1 teaspoon seasoning salt

  • 1 sautee onions and celery together until softened.
  • 2 add sausage until browned together and drain.
  • 3 in dutch oven combine wild rice and 3 celsius water, bring to a boil until rice is almost tender.
  • 4 add sausage mixture, and the rest of the ingredients to your dutch oven and heat through until rice is cooked completely.
  • 5 serve with garlic toast or a grilled cheese and a big glass of milk.

Strip Steaks With Chipotle Peach Glaze

Ingredients

  • Servings: 8
  • 1/2 cup peach preserves
  • 1/4 cup lime juice
  • 1 -3 chipotle chile, chopped fine (to taste)
  • 2 tablespoons cilantro
  • 1 teaspoon garlic pepper seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 8 strip steaks
  • 4 peaches, cut in half

Recipe

  • 1 mix preserves, juice, and chilis, and heat to simmer over low heat.
  • 2 stir in cilantro, garlic pepper, cumin, and salt.
  • 3 grill the steaks to preferred doneness.
  • 4 brush steaks with 1/2 of the preserves mixture.
  • 5 boil the remaining mixture for 1 minute.
  • 6 serve each steak with 1/2 peach, covering steak and peach with the boiled glaze.

Chicken With Grilled Peach And Chipotle Salsa

Ingredients

  • 5 ripe peaches, pitted and quartered
  • salt and pepper
  • 1 chipotle pepper in adobo plus 1 to 2 teaspoons adobo sauce
  • 2 green onions, thinly sliced
  • 1/4 bunch cilantro, chopped
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • salt and pepper

Recipe

  • 1 preheat grill. season peaches with salt and pepper, transfer to grill and cook, turning occasionally, until just blackened, 6 to 8 minutes total. transfer to a plate, set aside to let cool then roughly chop and transfer to a bowl. add chipotle pepper, adobo sauce, green onions, cilantro, salt and pepper and toss gently to combine. set salsa aside.
  • 2 toss chicken with oil, cumin, salt and pepper and transfer to grill. cook, flipping once, until just cooked through, 8 to 10 minutes. transfer to a platter, spoon salsa over the top and serve.

Crazy Easy Ranch Dip

Portabella Mushroom Quesadillas

  • 32 inches fat-free flour tortillas
  • 1/2 cup reduced-fat monterey jack cheese
  • 1/2 cup kraft free shredded fat-free cheddar cheese
  • 2 large portabella mushroom caps
  • 4 fresh garlic cloves
  • 2 tablespoons chopped fresh oregano
  • 1 pinch cayenne pepper (optional)
  • olive oil flavored cooking spray

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 cut portabello mushrooms into slices about 1/4" thick.
  • 3 heavily spray large baking sheet with olive oil cooking spray.
  • 4 spread mushrooms in single layer on sheet; place garlic on there also.
  • 5 bake in 450 degree oven for about 30 minutes, or until roasted and tender.
  • 6 lightly spray baking sheet.
  • 7 place tortillas on baking sheet.
  • 8 remove skin from garlic; mash garlic on tortilla with fork, spread around.
  • 9 do the same with the other tortillas.
  • 10 chop mushroom into pieces and divide among tortillas.
  • 11 mix together cheeses in a bowl; put approximately 1/4 cup of cheese blend on each tortilla.
  • 12 divide oregano among tortillas, and add a pinch of cayenne, if desired.
  • 13 fold tortilla in half and spray top lightly with olive oil spray.
  • 14 bake in 450 degree oven for approximate 5-8 minutes, or until cheese is melted and top is lightly browned.
  • 15 cut each quesadilla into 3 pieces and serve.

Skillet Cornbread With Bacon And Chives

  • 4 slices bacon
  • 2 cups yellow cornmeal
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 2 tablespoons finely chopped fresh chives
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup sour cream

Recipe

  • 1 in a 10-inch nonstick, oven-proof skillet over medium heat, lay the bacon flat and cook until crispy, 10 to 12 minutes, turning occasionally.
  • 2 drain the bacon on paper towels.
  • 3 pour off and discard all but 2 tablespoons of bacon fat in the skillet.
  • 4 in a large bowl combine the cornmeal, flour, sugar, baking powder, baking soda, salt, black pepper, and cayenne pepper. finely chop the drained bacon and add it to the bowl along with the chives.

  • 12 allow to cool completely in the skillet. invert the cornbread onto a cutting board. cut into wedges.
  • 13 serve at room temperature.

Corn Cob Syrup

  • 12 large clean corn cobs
  • water, to cover
  • 2 lbs brown sugar

Recipe

  • 1 cover one dozen large, clean corn cobs with water; boil one to two hours. drain off the water and strain it (there should be 1 pint of it). add two pounds of brown sugar to this and boil to desired thickness.

Meatball Sub Sandwich Casserole

  • 1/3 cup chopped onion
  • 1/4 cup breadcrumbs or 1/4 cup crushed saltine
  • 3 tablespoons parmesan cheese, grated
  • 1 lb ground beef or 1 lb ground venison
  • 1 loaf italian bread, 1-inch cubes (1 lb loaf)
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup mayonnaise (no substitutes)
  • 1 teaspoon mixed italian herbs (basil, oregano...)
  • salt & pepper
  • 2 cups shredded mozzarella cheese (divided)
  • 1 quart spaghetti sauce (or 28 oz can)
  • 1 cup water
  • 4 garlic cloves, minced (or pressed)

Recipe

  • 1 preheat oven to 400.
  • 2 in a bowl, combine onions, crumbs & cheese; add beef and mix well.
  • 3 shape beef into 1-inch balls; place on rimmed cookie sheet; bake for 15-20 minutes (no longer pink in center); turn oven down to 350.
  • 4 meanwhile, arrange bread cubes in an ungreased 13x9 pan.
  • 5 combine cream cheese, mayo, seasonings, and s&p; spread over bread.
  • 6 sprinkle one cup mozzarella cheese over the cream-cheese mixture layer.
  • 7 combine sauce, water & garlic; add meatballs and gently mix; pour this over the cheese layer.
  • 8 sprinkle remaining mozzarella.
  • 9 bake (uncovered) at 350 for 30 minutes (top will be bubbly and quite fragrant).
  • 10 options: use half cheddar and half mozzarella; try some sliced black olives; sprinkle some grated zucchini in for added nutritional value (and get a few veggies past the kids!--it's the secret ingredient).

Stromgren Barbecued Lamb Chops

Portabella Relleno

Ingredients

  • Servings: 2
  • 2 large portabella mushrooms
  • 1 avocado
  • 1 tomato (seeded & peeled)
  • 1 serrano pepper (seeded & chopped)
  • 2 tablespoons breadcrumbs
  • 3 garlic cloves (minced)
  • 1 tablespoon lemon juice
  • 1 teaspoon onion salt
  • 1/4 teaspoon salt
  • 3/4 cup mozzarella cheese (shredded)
  • 1 tablespoon chopped fresh cilantro (for garnish)

Recipe

  • 1 carefully remove stems from mushrooms being careful not to split the mushroom caps.
  • 2 chop the stems and place in large mixing bowl.
  • 3 add avacado, tomato, serrano pepper, breadcrumbs, garlic, lemon juice, onion salt, and salt.
  • 4 mix until well combined.
  • 5 fill mushrooms with the mixture packing it firmly.
  • 6 bake in pre-heated oven @ 350 for 7 minutes.
  • 7 remove from oven and sprinkle each mushroom with cheese.
  • 8 return to oven and bake for about 5 minutes or until cheese is melted.
  • 9 garnish with cilantro and serve.

Lemon Rosemary Dressing

Ingredients

  • Servings: 12
  • 1 sprig rosemary
  • 1 garlic clove, peeled
  • 1 strip lemon peel (about a 1-inch x 1/2-inch strip)
  • 3/4 cup olive oil
  • 1/4 cup lemon juice

Recipe

  • 1 place the rosemary and garlic on a cutting board. lightly crush both with a heavy knife.
  • 2 put the rosemary, garlic, and lemon peel in a clean bottle or jar with a tight fitting lid.
  • 3 pour in the oil and the lemon juice and cap tightly. shake well.
  • 4 this dressing will keep for a week in the refrigerator. shake well before serving.
  • 5 12-1 tbsp servings.

Spoon Taco

  • 1 (12 ounce) bag corn chips
  • 1 lb ground beef, cooked
  • 1 packet taco seasoning
  • 1 cup lettuce
  • 1 cup taco cheese
  • 1 (10 ounce) bottle taco sauce or 1 (10 ounce) bottle salsa
  • 1 (10 ounce) can olives (optional)

Recipe

  • 1 cook and drain beef and add taco seasoning to packet directions.
  • 2 on a plate layer chips, lettuce, cheese, and other taco toppings and taco sauce.
  • 3 scoop and enjoy.

Hot Rod Chili

  • 2 tablespoons all-purpose flour
  • 4 teaspoons chili powder
  • 1 teaspoon crushed red pepper flakes
  • 4 tablespoons dried onion flakes
  • 1 teaspoon mexican oregano
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 2 teaspoons seasoning salt
  • 1 teaspoon cumin
  • 2 lbs ground beef
  • 1/2 cup finely chopped sweet onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red pepper
  • 1/2 cup finely chopped green pepper
  • 3 (15 1/2 ounce) cans pinto beans, drained
  • 1 (28 ounce) can diced tomatoes
  • 16 ounces v- 8 juice

Recipe

  • 1 mix together all of the chili seasoning ingredients and set aside.
  • 2 in a large dutch oven, add the first five ingredients of the the chili meat base over medium heat.
  • 3 cook until meat is lightly browned and veggies are almost fork tender, about 20 minutes.
  • 4 drain meat/veggie mixture and return to pan.
  • 5 add beans and chili seasoning mix, stir until well blended.
  • 6 then add the tomatoes and v-8 juice, mixing well.
  • 7 let simmer on medium-low heat for about 30 minutes stirring every now and then.( if you like the longer you let it simmer the better it will taste.).

Ospidillo Cafe Morel Mushrooms

Ingredients

  • Servings: 4
  • 1 cup ka-me tempura batter frying mix
  • 1 cup water
  • 2 cups crisco shortening
  • 1 teaspoon paul prudhomme's poultry magic seasoning (optional)
  • 20 fresh morels
  • 2 quarts of heavily salt water

Recipe

  • 1 slice the morels lengthways and soak overnight (or up to 24 hours) in the salt water in the refrigerator.
  • 2 drain and rinse the mushrooms in cold water.
  • 3 dry the mushrooms on a towel.
  • 4 mix the batter, using the tempura mix, the 1 cup of water and the poultry magic (if used -- seasoned salt can also be used if you can't find the poultry magic).
  • 5 in a large skillet, melt the crisco over high heat.
  • 6 when the crisco has melted and is very hot (375-400 degrees), dip each mushroom half in batter and drop into the skillet. make them in several batches -- do not crowd them.
  • 7 fry until brown, turning them once.
  • 8 serve hot.
  • 9 (the cooking time is "per batch").

Game Day Dip

Ingredients

  • 2 loaves round hawaiian bread
  • 1 cup helmans mayonnaise
  • 8 ounces sour cream
  • 2 tablespoons dried parsley
  • 2 teaspoons beau monde seasoning
  • 2 teaspoons dill weed
  • 3 (4 ounce) packages corned beef
  • 5 green onions

Recipe

  • 1 combine mayonnaise and sour cream.
  • 2 add parsley,beaumonde,and dill.
  • 3 chop the corn beef and onion very small and add to the mixture.
  • 4 scoop the center out of one of the loaves of bread and reserve. make sure the hole is big enough to hold the dip.
  • 5 slice the reserved bread and the other loaf of bread into three or four inch cubes.
  • 6 place cubes around the bread bowl and serve.

Sausage, Egg & Cheese Biscuits

Ingredients

  • 2 cups bisquick
  • 1 lb cooked & crumbled sausage
  • 1 egg
  • 2/3 cup plain yogurt
  • 2/3 cup shredded cheese
  • 1/2 teaspoon salt

Recipe

  • 1 combine all ingredients well in a large mixing bowl.
  • 2 form patties about 1/2" thick and 3" diameter.
  • 3 place patties on a greased cookie sheet about 1" apart.
  • 4 bake at 450 for 11 - 15 minutes, or until golden brown.
  • 5 enjoy!
  • 6 substitutions: sausage: you could use vegetarian sausage without browning.
  • 7 yogurt: milk or sour cream or buttermilk.

Skillet Lasagna

Ingredients

  • Servings: 8
  • 1 lb lean hamburger (90% at least)
  • 1 (26 ounce) jar spaghetti sauce (or your favorite home made)
  • 1 (8 ounce) package pasta, with ruffled edges (pasta ribbons, campanella or any small noodle resembling mini lasagna)
  • 8 ounces grated mozzarella cheese

Recipe

  • 1 cook pasta in boiling water according to package directions brown lean hamburger in a large nonstick skillet.
  • 2 drain thoroughly.
  • 3 add spaghetti sauce and simmer about 5 minutes.
  • 4 when pasta is cooked, drain rinse with hot water.
  • 5 transfer the meat sauce to another large container.
  • 6 place 1/2 of the pasta in the skillet and spread evenly.
  • 7 pour 1/2 of the meat sauce over the pasta and spread evenly.
  • 8 sprinkle 1/2 of the chesse over meat sauce.
  • 9 repeat with another layer of the remaining pasta, meat sauce and grated cheese.
  • 10 cover and cook over medium heat for about 5 minutes or until cheese is melted.
  • 11 remove from heat and let stand 2-3 minutes before serving.
  • 12 serve with your favorite garlic bread.

Game Day Foiled Fiesta Dip #rsc

Ingredients

  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • 1 (16 ounce) can black beans
  • 1 lemon
  • 1 (4 ounce) can chopped green chilies
  • 1 tablespoon cumin
  • salt
  • pepper
  • reynolds wrap foil

Recipe

  • 1 using your favorite knife, chop the bell pepper and cherry tomatoes into small pieces.
  • 2 place in a medium bowl.
  • 3 cut lemon and squeeze juice onto tomatoe/pepper mix.
  • 4 add one can black beans, can of green chiles, cumin, salt and pepper (to taste).
  • 5 stir together.
  • 6 cover and refrigerate or let sit for at least one hour.
  • 7 using football (or round for other balls) shaped cookie cutter, measure out and cut enough foil to insert in and wrap slightly over cookie cutter.
  • 8 remove cookie cutter and trim or fold under corners. you should now have a football shaped bowl for serving your dip inches.
  • 9 you may also form by hand.
  • 10 fill bowls with fiesta dip and serve with your favorite chips.
  • 11 extra point! pipe sour cream over the top with an arc and three "stripes" across it to represent the seam of the football. thin slices of red bell pepper will work also.

Mulberry Fudge Chewies

  • 1 1/2 cups ripe mulberries (to make 2/3 c mulberry juice)
  • 2 cups sugar
  • 2 tablespoons butter

Recipe

  • 1 you can use this recipe for any low pectin fruit eg.
  • 2 saskatoons, blueberry, elderberry, raspberry, blackberry or may-apple.
  • 3 cook 1 1/2 cups of ripe mulberries[unripe fruit is toxic- see about red mulberry], mash and drain through a fine sieve or jelly bag to obtain the juice: about 2/3 cup yield.
  • 4 mix juice with sugar and butter and cook over low heat until sugar dissolves.
  • 5 bring to a boil on medium and boil without stirring until soft-ball candy stage- 240 deg f.
  • 6 remove from heat; cool until lukewarm and beat with a wooden spoon until mixture looses its gloss.
  • 7 press into a buttered pan and cut into squares before the candy hardens.
  • 8 keep in a tightly covered dish or freeze because this candy hardens when exposed to the air.

Portabella Mushroom Fajitas

  • 3/4 lb portabella mushrooms or 3/4 lb cremini mushroom, thinly sliced

  • 1 medium onion, cut into 1/2 inch rings
  • 1 teaspoon minced garlic

  • 1 (15 ounce) can ranch style beans (do not drain)
  • 1 can kidney bean (drained)

  • 4 cups hot seasoned mashed potatoes
  • 1 egg

  • 1 preheat oven to 375.

  • 1 teaspoon chili powder (chipotle-type)
  • 1 teaspoon garlic salt
  • 1 tablespoon italian salad dressing mix, powder (from a packet)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon mesquite powder (durkee smokey)

Recipe

  • 1 melt the pound of butter in a large glass bowl, using the "defrost" mode of the microwave. before it is totally melted, remove it from the microwave.
  • 2 pour in the seasonings and stir well with a fork.
  • 3 using a bowl that is wider at the top than at the bottom, (for a mold) spray the bowl with pam and pour in the seasoned butter.
  • 4 place in freezer until solid again. unmold when solid, wrap in aluminum foil and store in refrigerator until needed for use.

Sharon's Creamy Chile Chicken

  • 1/2 cup shredded monterey jack cheese
  • 4 flour tortillas, warmed

  • 1 cook chicken in butter. set aside, keeping warm.
  • 2 cook onion and garlic in drippings. stir in cream, scraping up bits in pan. mix in chilies. simmer to slightly thicken.
  • 3 return chicken to pan, turning in sauce.

  • 2 -3 lbs boneless skinless chicken breasts
  • 1 cup seasoned bread crumbs
  • 1 -2 egg, lightly scrambled
  • 1/2 lb fresh sliced mushrooms
  • 2 -3 tablespoons butter
  • 1/2 lb fresh muenster cheese
  • 4 -6 tablespoons butter
  • 4 beef bouillon cubes or 4 equivalent granular bouillon
  • 1 1/2 cups boiling water

Recipe

  • 1 cut chicken breasts in half lengthwise, and pound slightly with a meat mallet (having chicken in a durable zipper bag.).
  • 2 place pounded chicken in a bowl, pour scrambled egg over the chicken, stirring to coat chicken. cover and place bowl in the refrigerator for a 2 or more hours.
  • 3 slice mushrooms. saute for just a few minutes in melted butter. set aside.
  • 4 dredge chicken pieces in seasoned (or plain) bread crumbs, and place on a platter.
  • 5 in an electric skillet, melt enough butter to coat bottom of pan, on med hi heat.
  • 6 fry chicken pieces just until lightly browned, turning to fry other side, and adding butter to the pan as needed. chicken will not be done at this point.
  • 7 place browned chicken in a 13x9 pan, (or the size to fit your party!).
  • 8 cover chicken with sliced muenster cheese.
  • 9 place sauteed mushrooms over muenster cheese. .
  • 10 ** *if desired, you can stop here, cover with foil and refrigerate***.
  • 11 at cooking time preheat oven to 350.
  • 12 mix bouillon with boiling water, set aside until dissolved.
  • 13 pour dissolved bullion mixture over the top of the chicken.

  • 15 bake 45 minutes with foil on.
  • 16 remove foil and bake 15 additional minutes to brown cheese. (you can also carefully broil for a few minutes here instead, but watch it carefully!).

  • 3/4 cup celery, sliced

  • 1/2 cup flour

  • 1 soak the raisins in rum overnight.
  • 2 preheat oven to 350 degrees.
  • 3 drain the raisins and dispose of rum then set them aside.

  • 6 mix in small bowl egg, vanilla, rum and milk.

Pat's No-fail Boiled Eggs

Recipe

  • 1 in a large (not aluminum) cooking pot, add the 4 quarts of hot tap water, set it on the stove, and set your burner to high heat. do not salt the water and leave the pot uncovered throughout this recipe!
  • 2 immediately place the eggs in the water, using a large spoon to do so as not to break them. don't wait for the water to boil to add the eggs! carefully move the eggs around with a long-handled spoon every few minutes which keeps the yolks centered in the eggs.
  • 3 when the water begins to boil (large bubbles), set your timer to 13 minutes and slightly reduce the heat so that the boiling process does not bounce the eggs around -- a low boil is fine. you may still get a cracked egg now and again but just leave it in the pot with the others -- it will taste just fine.
  • 4 every minute or so, for the first 3 minutes of when the eggs begin to boil, continue to carefully move the eggs around just a little with a long spoon to ensure that the yolks stay in the center of the eggs.
  • 5 at the end of the 13 minutes, immediately remove the pot from the heat, carefully drain the hot water, and then run cold tap water into the pot with the eggs in it. repeat this cycle at least 2-3 times to cool the eggs and then allow the eggs to sit in the cool tap water for about a final 5 minutes.
  • 6 peel your eggs by cracking them on the inside of your sink and then roll them just a bit to crumble the middle of the shell. under cold tap water, peel the eggs and allow them to drain on paper towels before eating them or refrigerating them in zip-lock bags.

  • 3/4 cup fresh carrot
  • 3/4 cup frozen peas
  • 1 cup frozen tater tots

  • 4 tablespoons flour
  • 4 tablespoons butter
  • 1 cup milk
  • 1 cup chicken broth
  • 1 pillsbury ready made pie dough

Recipe

  • 1 preheat the oven to 375 degrees.
  • 2 if you use a rotisserie chicken, cut chicken from the carcass and chop to bite sized pieces.
  • 3 if there is cooking juice at the bottom of the chicken container, set this aside for later.
  • 4 place tater tots on bottom of a deep dish pie pan, enough to roughly cover the bottom.
  • 5 bake the tater tots until crispy and well done.
  • 6 while tater tots are cooking, start a small pot of water to boil (for blanching carrots), and chop carrots, celery, onion and garlic.
  • 7 when water starts to boil, drop in carrots to blanch or half cook, then drain and set aside.
  • 8 zap frozen peas in microwave to thaw, set aside.
  • 9 take the pan with tater tots out of the oven when well done, and mash them down until they completely cover the bottom of the pie pan; set aside.
  • 10 combine broth, milk and rotisserie chicken juices in a pouring container and zap in the microwave to take off the chill.
  • 11 set butter inside a medium sized saucepan to melt.
  • 12 add garlic and onions and saute until soft.
  • 13 add flour to this mixture and cook for about 3 minutes on medium high heat.
  • 14 gradually add milk/broth mixture, making a thickened sauce.
  • 15 season sauce with salt and pepper.
  • 16 combine chicken, carrots, peas and celery in a bowl and then fill pie pan with this mixture. carefully pour over this with milk/broth sauce.
  • 17 remove pre-made pie crust from wrapper and lay over pie pan.
  • 18 pinch to close, and pierce the top three times on top to release steam while baking.
  • 19 bake in oven until top crust is golden.

Meatloaf Bacon Mushroom Swiss Meatloaf

  • 1 1/2 lbs lean ground beef steaks
  • 12 ounces of diced raw hickory smoked pepper bacon
  • 1 medium sized diced vidalia onion
  • 1 whole fresh egg
  • 1 teaspoon garlic salt
  • 1 teaspoon teriyaki sauce
  • 1/4 cup evaporated milk
  • 5 large chopped button mushrooms
  • 8 ounces of shredded swiss cheese
  • 1/2 cup garlic-flavored croutons

Recipe

  • 1 this recipe is awesome, and probably one of our favorites. to begin, preheat your oven to 350 degrees fahrenheit, or about 175 degrees celsius.
  • 2 now take out a medium sized cooking skillet, and fry up your hickory smoked pepper bacon until it is a crisp golden brown color. once the bacon is cooked, remove it from your skillet, and place it on plate covered with paper towels, so some of the grease can be soaked away from it. with regard to the baking grease in the skillet, save it all, and use it to fry the onion and mushrooms, you will want to saute them to the point that they are tender and soft, and then remove them from the heat.
  • 3 next up take a large mixing bowl, and add in your lean ground beef steak, whole egg, and the evaporated milk. mix these contents together very well, and once done, add in the sauteed onion and mushrooms. next add in about half of the swiss cheese, and all but one single spoonful of the bacon.
  • 4 next up add in the garlic croutons, and keep mixing. your aim is to manually mix it together using your clean bare hands, soaking up all of the ingredients with the meat, evenly distributing all of the seasonings.
  • 5 once you have your beautiful loaf shaped to an oval, place it in a well greased baking pan. you will want to bake your meatloaf for one full hour.
  • 6 once it's done, sprinkle on the rest of the swiss cheese and fried bacon, and return it to the oven until the cheese is melted, which should be three to five minutes.
  • 7 serve it warm, with steamed veggies, and a hefeweizen beer with a slice of lemon. the beer and lemon will compliment the cheese and bacon very well.

  • 3 cups cottage cheese
  • 3 cups cheese, shredded
  • 4 eggs, beaten
  • 1 cup green chili pepper, diced
  • 1 1/2 cups corn, canned sweet yellow
  • 3/4 cup cilantro, minced
  • 1/2 cup onion, diced
  • 1 teaspoon salt
  • 3 teaspoons cumin, freshly ground
  • 1 tablespoon black pepper, freshly ground
  • 1 tablespoon garlic powder
  • 4 cups enchilada sauce
  • 3 dozen corn tortillas, softened in hot oil (2 dozen burrito sized flour tortillas)

Recipe

  • 1 soften the tortillas in hot oil (do not fry until crisp just softened) or hot enchilada sauce. stack on a plate as they are softened.
  • 2 mix sour cream, 2 cups shredded cheese, beaten eggs, green chiles, cilantro, onion, salt, pepper, cumin & garlic powder in a bowl.
  • 3 fill tortillas with cheese mixture one at a time and roll.
  • 4 place in large casserole dish (or two). pour enchilada sauce over top of enchiladas. sprinkle with cheese and bake in oven at 425 degrees for 30-40 minutes or until cheese is melted.

Galloping Horses

  • 2 oranges
  • 1 tablespoon vegetable oil
  • 1/4 cup peeled and finely sliced shallot
  • 115 g ground lamb or 115 g dark chicken meat
  • 1/4 cup roasted peanuts
  • 2 tablespoons palm sugar (i use light brown sugar)
  • 1 tablespoon fish sauce (i use soya sauce or salt + water)
  • 1 -2 fresh red chile, deseeded and sliced into thin slices crossways (can substitute these with green chillies)
  • 2 sprigs coriander leaves

Recipe

  • 1 peel and slice the oranges crossways into 5 slices each omitting the side slices and carefully remove all the pith and the seeds/ you can use 10 pineapple slices too sometimes as the oranges we get in india are not as compact as the western oranges.
  • 2 arrange the slices on a platter in a single layer.
  • 3 heat oil in a fry pan on medium heat and saute the onions until they brown.
  • 4 add the meat and stir till it is brown.
  • 5 reduce heat and add the peanuts, sugar and fish sauce.
  • 6 stir till the sugar has melted.
  • 7 put 1 tblsp or more of this meat mixture in the middle of each orange slice (divide the mix over the ten slices) place one slice of chilli (oh! galloping horses) and 1 leaf of the coriander leaf on each heap of meat and serve at room temperature.

Portabellas Stuffed With Parmesan Potatoes

  • 1 large red-skinned sweet potato, peeled, chopped
  • 2 large -skinned potatoes, peeled, chopped
  • 4 -5 teaspoons garlic, chopped
  • 1 bay leaf
  • 4 -6 tablespoons grated parmesan cheese
  • 2 large eggs, beaten until blended
  • 5 -6 portabella mushrooms (4 to 5-inch diameter)
  • 6 teaspoons olive oil
  • 1/2 cup chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon minced fresh rosemary
  • 1 (12 ounce) bag fresh baby spinach
  • salt and pepper

Recipe

  • 1 place the peeled potatoes, garlic, and bay leaf in large saucepan of boiling salted water and cook until the potatoes are very tender, about 12 minutes.
  • 2 drain and discard the bay leaf.
  • 3 return the potatoes to pot.
  • 4 mash them together until they are smooth and set aside to cool for about 5 to 7 minutes.
  • 5 after the waiting time mix in 3 to 4 tablespoons of parmesan cheese and season with salt and pepper.
  • 6 whisk in the eggs and set the mixture aside.
  • 7 remove the mushroom stems from the portobellos and chop them very fine.
  • 8 heat 2 teaspoons oil in large nonstick skillet over medium-high heat.
  • 9 add mushroom stems and onion and sauté 5 minutes.
  • 10 stir in parsley and rosemary and season with salt and pepper.
  • 11 preheat oven to 400.
  • 12 brush rounded sides of mushrooms with 3 teaspoons oil.
  • 13 place them on a baking sheet, gill sides up.
  • 14 bake for 10 minutes.
  • 15 reduce oven temperature to 350.
  • 16 divide the onion mixture among mushroom caps.
  • 17 mound the potato on top of the onion mixture inside the caps.
  • 18 sprinkle the tip of the potato mixture with the remaining parmesan cheese.
  • 19 bake until heated through, about 25 minutes.
  • 20 while the mushrooms are cooking heat 1 teaspoon oil in large pot over medium heat.
  • 21 add the fresh spinach and sauté 2 minutes.
  • 22 season with salt and pepper.
