Dan's Chicken Enchiladas

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 1 small onion, minced
  • 1 tablespoon minced garlic
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 1 teaspoon chili powder or 1 teaspoon cayenne
  • salt and pepper
  • 16 medium flour tortillas
  • 1 lb mozzarella cheese or 1 lb monterey jack cheese, shredded

Recipe

  • 1 preheat oven to 350°f.
  • 2 brown chicken in pan.
  • 3 add the onion and garlic and sweat them.
  • 4 add oregano, basil, parsley, and chili powder.
  • 5 add salt and pepper if you wish.
  • 6 stir until well blended.
  • 7 set aside to cool for about 5 minutes.
  • 8 spoon a little filling into each tortilla and add half as much cheese to each; roll up and place into a baking pan.
  • 9 spread the rest of the cheese on the top.
  • 10 bake until cheese is bubbly and browns on the edges.
