Peach Cobbler From Quilt Country

Ingredients

  • Servings: 6
  • 1 cup flour
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 tablespoons butter, softened
  • 1 cup granulated sugar
  • 6 -8 peaches, peeled and sliced (depending on size)
  • 1/2 cup brown sugar
  • 1 teaspoon almond extract
  • 1 cup boiling water
  • nutmeg, grated

Recipe

  • 1 preheat your oven to 350 degrees.
  • 2 in a small bowl, combine flour, baking powder, 1 teaspoon nutmeg, and salt; set aside.
  • 3 in a large mixing bowl, cream the butter.
  • 4 add 1/2 cup of the granulated sugar and blend well.
  • 5 beat in the flour mixture.
  • 6 grease a 9 x 9 metal pan (metal gives this a dessert a better texture).
  • 7 place half of the peaches on the bottom.
  • 8 sprinkle half the flour mixture over the fruit.
  • 9 add the rest of the peaches.
  • 10 sprinkle with the remainder of the flour mixture.
  • 11 in a small bowl, combine the remaining 1/2 cup granulated sugar and the brown sugar.
  • 12 sprinkle the sugars over all.
  • 13 add the almond extract to the boiling water.
  • 14 pour over the cobbler but do not mix!
  • 15 sprinkle with grated nutmeg.
  • 16 bake for 1 hour.
  • 17 serve warm.
