Grilled Zucchini Parmesan Sandwiches

Ingredients
- 1/2 cup chopped onion
- 1 garlic clove, crushed
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon dried oregano, crushed
- 1/4 teaspoon salt
- fresh ground pepper, to taste
- 2 tablespoons olive oil
- 2 cups grated fresh zucchini
- 4 slices whole grain bread, toasted
- 1 tomato, thinly sliced
- 4 tablespoons parmesan cheese
Recipe
- 1 in a skillet, saute onion, garlic, basil, oregano, salt and pepper in olive oil until onion is translucent.
- 2 add zucchini and saute until soft.
- 3 spread vegetable mixture on toast.
- 4 top each sandwich with thin slices of tomato and a sprinkling of 1 tablespoon parmesan.
- 5 broil until cheese turns golden.
