Grilled Zucchini Parmesan Sandwiches

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup chopped onion
  • 1 garlic clove, crushed
  • 1/2 teaspoon dried basil, crushed
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon salt
  • fresh ground pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups grated fresh zucchini
  • 4 slices whole grain bread, toasted
  • 1 tomato, thinly sliced
  • 4 tablespoons parmesan cheese

Recipe

  • 1 in a skillet, saute onion, garlic, basil, oregano, salt and pepper in olive oil until onion is translucent.
  • 2 add zucchini and saute until soft.
  • 3 spread vegetable mixture on toast.
  • 4 top each sandwich with thin slices of tomato and a sprinkling of 1 tablespoon parmesan.
  • 5 broil until cheese turns golden.
