Easy Southwest Chicken Rolls

Ingredients

- 4 boneless skinless chicken breast halves
- 1 (5 ounce) can whole green chilies, drained
- 4 ounces monterey jack pepper cheese, sliced
- 1 egg
- 2 tablespoons water
- 1 cup tortilla chips, finely crushed
- salsa
- lime wedge (garnish)
Recipe
- 1 flatten chicken breast halves between 2 sheets of plastic wrap.
- 2 top each chicken breast with 1 whole green chile and 1 slice of cheese.
- 3 roll up and secure with toothpicks.
- 4 whisk together the egg and water in a shallow bowl.
- 5 dip chicken in egg mixture; dredge in tortilla chips and place in a 13 x 9 baking dish.
- 6 bake at 375ºf.
- 7 for 35 minutes.
- 8 let set for 5 minutes before serving.
- 9 serve with salsa and garnish with lime wedges.
