Liberal Waffles

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup ground roasted soybeans
  • 1/4 cup powdered milk
  • 1/4 cup ground flax seeds
  • 5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups skim milk
  • 2 eggs
  • 1/2 cup canola oil
  • 1 cup chopped walnuts

Recipe

  • 1 combine dry ingredients except walnuts in a large bowl, and mix well.
  • 2 whisk wet ingredients together in smaller bowl.
  • 3 pour liquid into dry ingredients, and mix until thoroughly blended.
  • 4 heat waffle iron.
  • 5 pour 1/4 cup waffle batter into waffle iron, and sprinkle a handful of nuts on top of batter.
  • 6 bake for 4-5 minutes until waffle is crispy and brown.
  • 7 serve hot, or reheat in the toaster later.
