Easy Chicken Soft Tacos

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 10 (8 inch) flour tortillas
  • 1 tablespoon vegetable oil
  • 1 lb boneless skinless chicken, cut into 1 inch pieces
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 2 tablespoons water, divided
  • 1 (16 ounce) can refried beans
  • 3/4 cup taco sauce
  • 2 cups shredded monterey jack cheese

Recipe

  • 1 preheat oven to 375 degrees; place tortillas on baking sheet.
  • 2 heat oil in large skillet; add chicken; cook until no longer pink; add 2 t seasoning mix and 1t water; mix well combine refried beans, remaining seasoning mix and remaining water in small bowl.
  • 3 spread bean mixture evenly over each tortilla.
  • 4 layer each with a drizzle of taco sauce.
  • 5 top evenly with chicken mixture, cheese and desired toppings (chopped tomatoes, sliced green onions, etc.).
  • 6 bake for 5-10 minutes or until cheese melts; fold each in half.
