Southwest Frito Pie

Ingredients
- Servings: 6
- 2 (16 1/4 ounce) frito corn chips
- 2 (15 ounce) chili (without beans)
- 1 (16 ounce) velveeta cheese
- 1 (10 ounce) rotel tomatoes
- 1 large onion, chopped
- 8 ounces mild cheddar cheese
- 4 1/4 ounces green chilies
Recipe
- 1 heat the two 15 ounce cans of chili and set aside for layering
- 2 microwave the velveeta cheese with the rotel diced tomatoes & green chilies.
- 3 line a 9x12 baking pan with one bag of fritoes.
- 4 pour half of the chili over fritoes
- 5 pour half of velveeta cheese and rotel mixture on fritoes.
- 6 layer half of the onions on top of cheese.
- 7 layer second bag of fritoes on top of first layer.
- 8 pour remaining chili for next layer.
- 9 add remaining velveeta cheese and rotel mixture.
- 10 layer remaining onions.
- 11 top with the 8 ounces of mild cheddar cheese.
- 12 green chilies will top it off.
- 13 bake at 350 degrees for 35 to 40 minutes. (should be bubbly hot).
