Southwest Skillet

Total Time: 38 mins Preparation Time: 15 mins Cook Time: 23 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1/2 cup uncooked instant rice
  • 1/2 cup water
  • 3 tablespoons chopped green bell peppers
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1 cup corn chips
  • 1 1/2 cups shredded cheddar cheese

Recipe

  • 1 in a skillet, cook beef and onion until meat is browned; drain.
  • 2 add next 8 ingredients; mix well.
