Pickled Bell Peppers

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1 cup vinegar
  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 1 tablespoon salt
  • 3 cucumbers, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced & rings seperated

Recipe

  • 1 combine vinegar, sugar, oil, and salt in pot.
  • 2 heat over medium-low, stirring often, until sugar is completely dissolved.
  • 3 place cucumbers, peppers, and onion in 2 large glass canning jars (quart size).
  • 4 cover with hot vinegar mixture.
  • 5 cover, let cool, and refrigerate for 24 hours before serving.
