Simple Southwestern Chicken Sandwiches

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 4 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 4 boneless chicken breast halves (4 oz. each)
  • 8 slices colby-monterey jack cheese
  • 8 slices sourdough bread (thick sliced)
  • 1/2 cup salsa (optional)
  • sour cream (optional)
  • guacamole (optional)

Recipe

  • 1 in a small bowl comebine oil and seasonings brush on chicken breast.
  • 2 grill covered over medium heat 6-8 minutes on each side till juice runs clear.
  • 3 combine 1 cup cheese and mayoniase; set aside.
  • 4 grill bread slices on one side till brown
  • 5 spread with cheese mixture grill untill cheese is melted. (if you opted for sliced cheese, simply place cheese on top of bread)
  • 6 place chicken on four slices of bread.
  • 7 top with your favorite condiments and remaining bread cheese side down.
