Red Pepper Corn Muffins

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • 1/3 cup finely chopped sweet red pepper
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup butter, melted

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 generously butter muffin tin -- 12 muffin regular size.
  • 3 whisk together cornmeal, flour, baking powder, baking soda and salt in a large mixing bowl.
  • 4 whisk together eggs, buttermilk and melted butter in a medium bowl.
  • 5 add buttermilk mixture and red peppers to the flour mixture and stir until just combined; do not overmix.
  • 6 place about 1/3 cup mixture into each of 12 muffin cups.
  • 7 bake for 12 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
  • 8 carefully remove muffins from tin to a wire rack to cool.
