Red Pepper Corn Muffins

Ingredients
- 1/3 cup finely chopped sweet red pepper
- 1 cup yellow cornmeal
- 1 cup flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/4 cups buttermilk
- 1/4 cup butter, melted
Recipe
- 1 preheat oven to 400 degrees.
- 2 generously butter muffin tin -- 12 muffin regular size.
- 3 whisk together cornmeal, flour, baking powder, baking soda and salt in a large mixing bowl.
- 4 whisk together eggs, buttermilk and melted butter in a medium bowl.
- 5 add buttermilk mixture and red peppers to the flour mixture and stir until just combined; do not overmix.
- 6 place about 1/3 cup mixture into each of 12 muffin cups.
- 7 bake for 12 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
- 8 carefully remove muffins from tin to a wire rack to cool.
