Mimi's Meatloaf

Ingredients

- 2 teaspoons butter
- 3/4 lb ground beef
- 1/4 lb ground lamb
- 1 cup minced onion
- 1/2 cup minced green pepper
- 1 tablespoon chopped garlic
- 2 eggs
- 1/2 cup heavy cream
- 3/4 cup breadcrumbs
- salt & freshly ground black pepper
- 2 cups beef broth
- 2 tablespoons flour
- 2 tablespoons water
Recipe
- 1 preheat oven to 350 degrees.
- 2 butter a roasting pan. mix beef, lamb, onions, green peppers, garlic, eggs, cream and bread crumbs together in large mixing bowl. season mixture with salt and pepper. shape into a loaf and place on prepared pan. pour broth over top and place in oven and bake for 1 to 1 1/2 hours, basting occasionally.
- 3 remove pan from oven. using long spatula, remove meat loaf from the pan. place roasting pan on stove over high heat. in a small bowl, whisk flour with 2 tablespoons water. whisk slurry into gravy. bring liquid to boil and cook for a few minutes, stirring constantly. season gravy with salt and pepper.
- 4 slice meatloaf into 8 slices. serve 2 slices per person with gravy.
