Mimi's Meatloaf

Ingredients

  • Servings: 4
  • 2 teaspoons butter
  • 3/4 lb ground beef
  • 1/4 lb ground lamb
  • 1 cup minced onion
  • 1/2 cup minced green pepper
  • 1 tablespoon chopped garlic
  • 2 eggs
  • 1/2 cup heavy cream
  • 3/4 cup breadcrumbs
  • salt & freshly ground black pepper
  • 2 cups beef broth
  • 2 tablespoons flour
  • 2 tablespoons water

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 butter a roasting pan. mix beef, lamb, onions, green peppers, garlic, eggs, cream and bread crumbs together in large mixing bowl. season mixture with salt and pepper. shape into a loaf and place on prepared pan. pour broth over top and place in oven and bake for 1 to 1 1/2 hours, basting occasionally.
  • 3 remove pan from oven. using long spatula, remove meat loaf from the pan. place roasting pan on stove over high heat. in a small bowl, whisk flour with 2 tablespoons water. whisk slurry into gravy. bring liquid to boil and cook for a few minutes, stirring constantly. season gravy with salt and pepper.
  • 4 slice meatloaf into 8 slices. serve 2 slices per person with gravy.
