Ingredients

- 1 cup fine breadcrumbs
- 2 cups milk, scalded
- 2 eggs, separated
- 1/2 cup sugar, divided
- 1/4 teaspoon salt
- currant jelly or jam
Recipe
- 1 soak crumbs in milk. beat egg yolks; add 1/4 cup of the sugar and salt and add to the milk mixture. pour into greased baking dish, set in pan of hot water and bake in 350º oven for 1 hour or until firm. spread a thick layer of jelly over top.
- 2 beat egg with remaining 1/4 cup sugar until stiff. spread meringue over top of pudding. bake 10 minutes longer or until browned.
- 3 serve hot or cold.
