Queen Of Puddings

Total Time: 1 hr 25 mins Preparation Time: 15 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 6
  • 1 cup fine breadcrumbs
  • 2 cups milk, scalded
  • 2 eggs, separated
  • 1/2 cup sugar, divided
  • 1/4 teaspoon salt
  • currant jelly or jam

Recipe

  • 1 soak crumbs in milk. beat egg yolks; add 1/4 cup of the sugar and salt and add to the milk mixture. pour into greased baking dish, set in pan of hot water and bake in 350º oven for 1 hour or until firm. spread a thick layer of jelly over top.
  • 2 beat egg with remaining 1/4 cup sugar until stiff. spread meringue over top of pudding. bake 10 minutes longer or until browned.
  • 3 serve hot or cold.
