Mediterranean Vegetable Medley

Ingredients

- 2 cups water
- 2 lbs fresh green beans, trimmed
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup pitted kalamata olive, cut in half
- 3/4 cup small cherry tomatoes, cut in half
- 2 teaspoons finely chopped fresh oregano leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup crumbled feta cheese
Recipe
- 1 place water in 4-quart saucepan. cover; cook over medium-high heat until water comes to a boil (2 to 3 minutes). add green beans. cover; continue cooking until beans are crisply tender (4 to 6 minutes). drain.
- 2 add butter, oil and olives to green beans. cook, stirring occasionally, 3 minutes. add tomatoes, oregano, salt and pepper. cook, stirring occasionally, 1 minute. top with feta cheese, if desired. serve immediately.
- 3 you can substitute 1 teaspoon dried oregano leaves if you do not have fresh.
