Hot Texas Chili

Total Time: 2 hrs 20 mins Preparation Time: 50 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 8
  • 1/4 cup vegetable oil
  • 3 lbs lean beef chuck, well trimmed
  • 1 cup red onion, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 2 teaspoons habanero sauce (tabasco makes a good one)
  • 3 cups water
  • 4 ounces green chilies, chopped
  • 8 ounces sharp cheddar cheese, shredded

Recipe

  • 1 cut beef into 1-inch cubes heat oil in a 5-quart dutch oven over medium-high heat.
  • 2 add beef 1/3 at a time and cook until browned on all sides; remove from pan and set aside.
  • 3 add onion and garlic to pan and cook 5 minutes or until tender, stirring frequently.
  • 4 stir in chili powder, cumin, salt and habanero sauce; cook 1 minute.
  • 5 add water, chilies and browned meat and bring to a boil; reduce heat, cover and simmer 1 1/2 hours until beef is tender.
