Green Chile Lamb Chops

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 4 lamb loin chops
  • 1 medium yellow onion, chopped
  • 4 fresh garlic cloves, minced
  • 1 -2 teaspoon fresh oregano, chopped
  • 3 (4 ounce) cans diced mild green chilies
  • 1 (14 ounce) can diced tomatoes
  • 2 cups water
  • salt, to taste
  • pepper, to taste
  • red chili pepper flakes, to taste

Recipe

  • 1 pour oil in a large saute pan with a lid.
  • 2 heat over medium high until hot.
  • 3 add lamb chops, onions, garlic and oregano.
  • 4 saute for 5 minutes or until the onions are translucent and the lamb chops are browned.
  • 5 add the rest of the ingredients and bring to a boil.
  • 6 cover and simmer for 30 minutes or until lamb chops are tender.
