Gooseberry Fool

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 pint gooseberry, stemmed
  • 1/4 cup sugar
  • 2 -3 tablespoons water
  • 1 cup heavy cream, whipped
  • sugar

Recipe

  • 1 put the gooseberries in a non-reactive saucepan with 1/4 cup of sugar and the water.
  • 2 cook very gently until the gooseberries are thoroughly done and soft enought to mash.
  • 3 put them through a sieve or food mill and add sugar to taste.
  • 4 fold the gooseberry puree through the whipped cream.
  • 5 chill for several hours.
