Sugar Cookies (light & Crisp)

Ingredients
- 1 cup granulated sugar, divided
- 1/2 cup powdered sugar
- 1/2 cup butter, no substitutions (softened)
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon almond extract or 1 teaspoon butter flavor extract
- 2 1/3 cups flour
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Recipe
- 1 preheat oven to 350°f.
- 2 in a large mixing bowl, cream together 1/2 cup granulated sugar, powdered sugar, butter, and vegetable oil.
- 3 beat in egg and extract.
- 4 add next 4 ingredients and mix together. the dough will be somewhat soft. refrigerate a few minutes if too soft to work with.
- 5 shape into 1-inch balls and roll in reserved 1/2 cup of granulated sugar.
- 6 place on an ungreased cookie sheet and flatten with the bottom of a glass that has been dipped in granulated sugar (or colored sugar if you prefer).
- 7 bake at 350°f for 10-12 minutes.
- 8 note: cookies should be only very slightly browned. they will be a more of a light golden color.
