Potato Skins With Parmesan

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 3 lbs baking potatoes
  • vegetable oil
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt
  • pepper
  • cayenne pepper (or paprika)
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons minced parsley

Recipe

  • 1 preheat oven to 425.
  • 2 wash and scrub potatoes.
  • 3 pat dry, then brush potatoes with the vegetable oil.
  • 4 bake potatoes for 1-2 hours, or until done.
  • 5 cut in half, and scoop out centers, leaving approx.
  • 6 1/2" layer of in the skin.
  • 7 cut each half in to 3 wedges (lengthwise).
  • 8 put on baking sheet and brush the insides of potatoes liberally with olive oil.
  • 9 mix together garlic, seasonings, cheese and parsley.
  • 10 lightly top potatoes with the mixture.
  • 11 bake for 20-25 minutes until crisp and golden brown.
