Pasole With Linquica

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 cups vegetable broth
  • 1 (15 ounce) can hominy ( or golden)
  • 1 (14 1/2 ounce) can diced tomatoes with garlic
  • 2 cups sliced linguica sausage
  • 1 large baking potato, peeled and diced
  • 1/2 cup chopped celery
  • 1 medium onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 2 tablespoons goya recaito

Recipe

  • 1 in a large saucepan, or dutch oven add all ingredients, and simmer over a low heat, covered until the potatoes are tender, and the flavors blended.
  • 2 use your own discretion on the amount of spices to use.
  • 3 goya's recaito is a nice addition and gives the stew the cilantro flavor.
  • 4 serve with some hot sauce, and a nice crusty bread.
  • 5 leave out the linquica and it's a great vegetarian stew.
