Migas

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 dozen egg, beaten
  • 1 bell pepper, chopped
  • 1 bunch green onion, chopped
  • butter
  • 2 cups shredded cheddar cheese
  • 2 cups crumbled tortilla chips
  • 1 can rotel
  • 1 (4 ounce) can chopped green chilies

Recipe

  • 1 beat eggs in a bowl, set aside.
  • 2 in large non-stick frying pan, melt butter and saute bell peppers and green onions.
  • 3 while those are sautéing, add tortilla chips to beaten eggs.
  • 4 add rotel and green chillies.
  • 5 simmer for 5 minutes.
  • 6 add egg mixture and cook over med-low until eggs are almost set.
  • 7 put on low, add cheese, cover until eggs are done and cheese is melted.
