Men's Health Southwest Sloppy Joes

Ingredients

- 1 tablespoon vegetable oil
- 1 medium red onion, diced
- 1/2 cup celery, diced
- 1 teaspoon ginger puree
- 1 teaspoon minced jalapeno
- 1 lb ground lamb
- 1/2 cup diced canned tomato
- 1/2 cup barbecue sauce
- 1 ounce jim bean whiskey
- 1 tablespoon soy sauce
- 1 1/2 tablespoons lime juice
- 4 -6 sandwich buns
- 8 -12 iceburg lettuce leaves
- 4 -6 tablespoons guacamole
Recipe
- 1 heat a large saucepan over high heat. add the oil and swirl to coat. add the onions, celery, ginger, and jalapenos. saute until soft, about 2 minutes.
- 2 add the lamb and brown lightly.
- 3 add the tomatoes, barbecue sauce (i used billy bee), whiskey, soy sauce and lime juice. bring to a simmer and cook stirring occasionally for 15-20 minutes or until mixture will mound sloppy-joe-style.
- 4 toast the rolls. on the bottom half, place a leaf of lettuce, then scoop on the lamb mixture. top with lettuce, guacamole, and the top half of the roll.
- 5 great with a pint of light beer.
