Julie's Caramel Apple Salad

Ingredients
- Servings: 16
- 1/2 cup brown sugar
- 1 tablespoon flour
- tiny pinch kosher salt
- 1 egg
- 8 ounces crushed pineapple in juice
- 2 tablespoons cider vinegar
- 8 ounces lite cool whip
- 5 large granny smith apples (do not peel)
- 2 cups dry roasted peanuts
Recipe
- 1 combine brown sugar, flour, salt, egg, pineapple and cider vinegar in a small pan.
- 2 heat on stove over medium high heat until thickened (about 5 minutes) stirring occasionally.
- 3 remove from stove and cool in refrigerator.
- 4 after sauce has cooled, stir it together with the cool whip in a large bowl.
- 5 core apples and chop into bite size pieces.
- 6 mix apples and peanuts into sauce.
- 7 serve chilled.
