Spicy Chipolte Texas Chili

Ingredients

- 1 1/2 lbs ground beef (organic tastes best)
- 2 sweet italian sausage links
- 1/2 red onion, diced
- 1 teaspoon garlic paste
- 1 tablespoon olive oil (california preferred)
- 1 (14 1/2 ounce) can diced fire-roasted tomatoes (like muir glen organic)
- 1 (7 ounce) can chipotle chiles in adobo, diced (like goya)
- 5 pieces roasted red peppers, diced (jarred)
- 1/2 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon cayenne pepper
- 2 teaspoons garlic salt
- fresh ground black pepper
- cheddar cheese (optional)
- green onion (optional)
- sour cream (optional)
- corn chips (optional)
Recipe
- 1 remove sausages from casings and lightly fold into beef, browning all meat 3-5 min or until just cooked, drain off excess fat and set aside. cook the onions in the oil over medium-low heat for 5-7 minutes or until translucent. add the garlic paste and cook for 1 more minute. then add all remaining ingredients and add meat. bring to a boil, then reduce the heat and simmer, uncovered, for 20 minutes, stirring occasionally.
