Spicy Chipolte Texas Chili

Ingredients

  • Servings: 4
  • 1 1/2 lbs ground beef (organic tastes best)
  • 2 sweet italian sausage links
  • 1/2 red onion, diced
  • 1 teaspoon garlic paste
  • 1 tablespoon olive oil (california preferred)
  • 1 (14 1/2 ounce) can diced fire-roasted tomatoes (like muir glen organic)
  • 1 (7 ounce) can chipotle chiles in adobo, diced (like goya)
  • 5 pieces roasted red peppers, diced (jarred)
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons garlic salt
  • fresh ground black pepper
  • cheddar cheese (optional)
  • green onion (optional)
  • sour cream (optional)
  • corn chips (optional)

Recipe

  • 1 remove sausages from casings and lightly fold into beef, browning all meat 3-5 min or until just cooked, drain off excess fat and set aside. cook the onions in the oil over medium-low heat for 5-7 minutes or until translucent. add the garlic paste and cook for 1 more minute. then add all remaining ingredients and add meat. bring to a boil, then reduce the heat and simmer, uncovered, for 20 minutes, stirring occasionally.
