Santa Fe Chicken & Rice

Ingredients
- Servings: 4
- vegetable oil cooking spray
- 3/4 lb boneless skinless chicken breast, cut into strips (or left whole)
- 1 (8 ounce) jar salsa
- 1 (11 ounce) can of drained mexican-style corn (corn mixed with chopped red and green peppers)
- 1 (15 ounce) can black beans, rinsed and drained
- 4 cups cooked rice
Recipe
- 1 prepare rice according to directions.
- 2 spray large skillet with vegetable cooking spray and heat.
- 3 add chicken breast meat and cook on medium heat until chicken is cooked through.
- 4 stir in salsa, mexi-corn and black beans.
- 5 cook until all ingredients are heated through.
- 6 serve over cooked rice.
