Santa Fe Chicken & Rice

Total Time: 18 mins Preparation Time: 3 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • vegetable oil cooking spray
  • 3/4 lb boneless skinless chicken breast, cut into strips (or left whole)
  • 1 (8 ounce) jar salsa
  • 1 (11 ounce) can of drained mexican-style corn (corn mixed with chopped red and green peppers)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 4 cups cooked rice

Recipe

  • 1 prepare rice according to directions.
  • 2 spray large skillet with vegetable cooking spray and heat.
  • 3 add chicken breast meat and cook on medium heat until chicken is cooked through.
  • 4 stir in salsa, mexi-corn and black beans.
  • 5 cook until all ingredients are heated through.
  • 6 serve over cooked rice.
