Pecan And Bacon Waffles

Ingredients

- 1/2 cup bacon, chopped
- 1/2 cup butter
- 3 egg yolks
- 1 cup milk
- 3/4 cup pecans, roasted
- 1 cup cornmeal
- 3/4 cup flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 4 egg whites
- 12 ounces brown sugar
- 3/4 cup pecans, roasted
- 1/3 cup bourbon
- 1 tablespoon vanilla
Recipe
- 1 to prepare the waffles, cook bacon and butter in a skillet until crisp.
- 2 in a bowl beat egg yolks with the milk and then add the butter and bacon the the yolk/milk mixture.
- 3 chop the pecans.
- 4 in a bowl combine pecans, cornmeal, flour, salt and baking powder. stir dry ingredients into the wet ingredients.
- 5 beat egg whites until the reach the soft peak stage and then fold them into the batter.
- 6 cook waffles in a hot waffle iron until brown. if desired serve with bourbon syrup (recipe below).
- 7 to make the bourbon syrup:.
- 8 in a saucepan bring the water and sugar to a boil, stirring until sugar is dissolved. continue to boil without stirring until syrup thickens slightly and surface is shiny. pour syrup into a serving bowl, and stir in pecans. stir in whiskey and vanilla. keep warm.
