Mexicali Lamb Chops

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 boneless lamb loin chops
  • oil, for browning
  • 1 (1 1/4 ounce) package taco seasoning
  • 1 (15 ounce) can tomato sauce
  • 4 slices monterey jack pepper cheese

Recipe

  • 1 sprinkle chops with taco seasoning.
  • 2 use a meat mallet to pound the seasoning into the meat if desired.
  • 3 brown chops in a little oil on both sides over medium heat, about 10 minutes.
  • 4 add tomato sauce and bring to a simmer.
  • 5 cover and simmer 30 to 40 minutes until very tender.
  • 6 remove chops to serving platter.
  • 7 top with cheese.
  • 8 pour remaining sauce over all.
