Mexicali Lamb Chops

Ingredients

- 4 boneless lamb loin chops
- oil, for browning
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 ounce) can tomato sauce
- 4 slices monterey jack pepper cheese
Recipe
- 1 sprinkle chops with taco seasoning.
- 2 use a meat mallet to pound the seasoning into the meat if desired.
- 3 brown chops in a little oil on both sides over medium heat, about 10 minutes.
- 4 add tomato sauce and bring to a simmer.
- 5 cover and simmer 30 to 40 minutes until very tender.
- 6 remove chops to serving platter.
- 7 top with cheese.
- 8 pour remaining sauce over all.
