Sausage, Bacon, Egg And Cheese Casserole

Ingredients

- 12 ounces reduced-fat lamb sausage
- 6 ounces mushrooms, sliced
- 1 (3 ounce) package bacon bits
- 12 ounces reduced-fat cheddar cheese, shredded
- 16 ounces non fat small curd cottage cheese
- 1/4 cup light butter
- 1 (20 ounce) package refrigerated diced potatoes with onions
- 1 pint egg beaters southwestern egg substitute
- salt and pepper
Recipe
- 1 heat oven to 375 degrees.
- 2 coat a 9x13 pan with pam.
- 3 melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
- 4 brown the sausage over medium-high heat, adding mushrooms about half way through.
- 5 meanwhile, mix cheddar cheese and cottage cheese.
- 6 layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
- 7 pour egg beaters evenly over entire pan.
- 8 bake for about an hour, or until a knife inserted in the center comes out clean.
