Sausage, Bacon, Egg And Cheese Casserole

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 11
  • 12 ounces reduced-fat lamb sausage
  • 6 ounces mushrooms, sliced
  • 1 (3 ounce) package bacon bits
  • 12 ounces reduced-fat cheddar cheese, shredded
  • 16 ounces non fat small curd cottage cheese
  • 1/4 cup light butter
  • 1 (20 ounce) package refrigerated diced potatoes with onions
  • 1 pint egg beaters southwestern egg substitute
  • salt and pepper

Recipe

  • 1 heat oven to 375 degrees.
  • 2 coat a 9x13 pan with pam.
  • 3 melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
  • 4 brown the sausage over medium-high heat, adding mushrooms about half way through.
  • 5 meanwhile, mix cheddar cheese and cottage cheese.
  • 6 layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
  • 7 pour egg beaters evenly over entire pan.
  • 8 bake for about an hour, or until a knife inserted in the center comes out clean.
