Spicy Summer Salsa

Ingredients

  • 9 -10 large ripe tomatoes, peeled, quartered and seeded
  • 2 onions, peeled and quartered
  • 4 -5 canned chipotle peppers, in adobo sauce
  • 1 -3 jalapeno, seeded
  • vinegar, to taste
  • kosher salt, to taste

Recipe

  • 1 pulse tomatoes, onions and chipotle peppers in a food processor until coarsely ground. add jalapenos, one half at a time, taste testing after each addition. when the salsa has reached the desired spiciness, add vinegar, one tablespoon at a time, and salt, one teaspoon at a time, until seasoned to your taste.
  • 2 this freezes beautifully -- if it lasts long enough!
