Mexican Meat Pie

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs ground chuck
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 fresh tomatoes, chopped (canned ok)
  • 1 can rotel tomatoes
  • salt & pepper
  • 12 corn tortillas
  • 1 (16 ounce) can ranch style beans
  • 1 lb velveeta cheese, thinly sliced
  • 1 can cream of chicken soup

Recipe

  • 1 brown meat with onion and pepper.
  • 2 add tomatoes, salt and pepper.
  • 3 arrange in a 9x13 dish, one layer of tortillas, meat, beans, and cheese.
  • 4 repeat layers.
  • 5 top with soup.
  • 6 bake at 350 degrees for 35-40 minutes until bubbly.
