Marilyn's Stuffing

Ingredients

  • Servings: 12
  • 1/2 cup raisins (jumbo ones can be purchased from a health food store)
  • 1/2 cup frozen apple juice concentrate, thawed
  • 1/2 cup butter
  • 2 medium onions, chopped
  • 2 minced garlic cloves (buy garlic already minced)
  • 1 (16 ounce) package lamb sausage
  • 2 large granny smith apples, chopped
  • 3 celery ribs, chopped
  • 1 (8 ounce) package stuffing croutons
  • 3 cups chicken broth
  • 2 large eggs, lightly beaten
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon chopped sage
  • 1 teaspoon chopped thyme
  • 1/4 teaspoon chopped clove
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup chopped pecans (optional)
  • 1 (12 ounce) can ocean spray jellied cranberry sauce (optional)
  • 1 cup chopped cranberries (optional)

Recipe

  • 1 combine raisins and apple juice, let stand for 2 hours.
  • 2 melt butter in a large skillet over medium heat; add onion and garlic and saute 5 minutes or until tender. add sausage, and cook, stirring until it crumbles and is no longer pink; drain. stir in apples and celery and cook, stirring occasionally (for about 10 minutes). transfer mixture to a large bowl. stir in raisin mixture, croutons, and remaining ingredients until moistened. spoon into lightly greased 13x9 baking dish. bake covered at 350 degrees.
