Chili Verde

Total Time: 2 hrs 25 mins Preparation Time: 25 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 lbs lamb, cubed
  • 14 ounces green chilies, whole
  • 1 onion, chopped (medium)
  • 15 ounces tomatoes, diced
  • 2 garlic cloves, minced
  • 3/4 cup water
  • 1 tablespoon cornstarch (optional)
  • salt

Recipe

  • 1 brown meat in large pot using nonstick cooking spray or small amount of oil.
  • 2 cut chiles into large chunks.
  • 3 layer chiles, onion and tomatoes over meat.
  • 4 sprinkle garlic over tomatoes.
  • 5 pour water over mixture.
  • 6 bring to a boil, then reduce heat and simmer 2 hours.
  • 7 do not stir.
  • 8 check occasionally, adding water if necessary.
  • 9 just before serving, dissolve cornstarch in 3 tablespoons of water and stir into liquin in pan to thicken if desired.
  • 10 salt to taste.
