Coconut Macaroon Pie

Ingredients

  • Servings: 1
  • 1/2 cup chopped pecans
  • 1 recipe pastry for a 9 inch single crust pie
  • 1/2 cup butter, melted
  • 1 1/2 cups flaked coconut
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1/4 cup all-purpose flour
  • 1 1/2 cups white sugar
  • 2 eggs

Recipe

  • preheat oven to 325 degrees f (165 degrees c).
  • place pecans in bottom of pie shell.
  • combine melted butter, coconut, salt, water, flour, sugar, and slightly beaten eggs. pour filling over pecans in crust.
  • bake for 45 minutes, or until golden brown. cool before serving.
