Chicken Enchiladas (from Southern Living)

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 7
  • 2 tablespoons butter
  • 1 large onion, thinly sliced (or diced if you prefer smaller pieces of onion)
  • 10 ounces precooked chicken breasts, chopped into bite-size pieces (southwestern flavor, if available)
  • 1/2 cup roasted red pepper, diced
  • 2 (3 ounce) packages cream cheese, cubed
  • 4 (4 1/2 ounce) cans diced green chilies, drained
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sugar
  • 1 (14 1/2 ounce) can chicken broth
  • 1/2 cup salsa
  • 7 (7 inch) flour tortillas
  • 2 cups shredded cheddar cheese

Recipe

  • 1 melt butter in a large skillet over medium-high heat; add onions and cook 20 minutes or until tender. reduce heat to low; add chopped chicken, roasted pepper, and cream cheese. stir until combined; set aside.
  • 2 pulse chiles and next 5 ingredients in blender or food processor several times until combined.
  • 3 bring chile mixture and chicken broth to a boil in a saucepan over high heat; cook 5 minutes or until slightly thickened. (mixture should be the consistency of a thin gravy.) remove from heat and stir in salsa.
  • 4 spread one half of the chile mixture on bottom of a lightly greased 13x9 baking dish.
  • 5 spoon chicken mixture evenly down center of each tortilla; roll up and place, seam side down, in prepared baking dish. top with remaining chile mixture, spreading to coat. sprinkle with cheese.
  • 6 bake at 375 for 20 to 25 minutes or until bubbly.

Rustic Apple And Dried Cranberry Pie

Ingredients

  • Servings: 12
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 6 tablespoons butter, cold and cut into pieces
  • 3 tablespoons vegetable shortening
  • 5 -6 tablespoons ice water
  • 2 1/2 lbs apples, peeled cored, and sliced 1/4 inch thick (use whatever type you like best, i like a mixture of macintosh and granny smith)
  • 1/2 cup dried cranberries
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1 pinch ground nutmeg
  • 1 egg , beaten
  • 1 tablespoon sugar

Recipe

  • 1 pastry: combine flour, sugar, and salt in a food processor with a metal chopping blade; pulse to mix.
  • 2 add butter and shortening and pulse 5-8 more times until the mixture looks like coarse oatmeal.
  • 3 sprinkle with 1/2 the water and pulse.
  • 4 gradually add in more of the water in the same manner until the dough holds together when pinched with your fingertips (you may not need all of it).
  • 5 on a floured surface, form the dough into a ball and then flatten into a disk.
  • 6 wrap the dough in plastic wrap and refrigerate for at least 30 minutes and for up to 3 days.
  • 7 filling: toss apples, cranberries, 1/3 cup sugar, 2 tablespoons flour, and spices together in a large bowl; set aside.
  • 8 baking and assembly: preheat oven to 400°f roll dough on a floured surface to make a 15 inch circle.
  • 9 fold dough into quarters; place on a large baking sheet and unfold.
  • 10 place filling in the center of the pastry, leaving a 2 1/2 border all around.
  • 11 fold the pastry border over the filling (i fold this in several small sections- some pieces of the crust will overlap each other, and this is just how it should be; remember that it's a rustic pie).
  • 12 brush pastry with egg and sprinkle with sugar.
  • 13 bake for 25 minutes.
  • 14 pull oven rack out so you can get to the pie; cover the pie with foil and bake for 15 more minutes.
  • 15 cool on baking sheet on a wire rack.
  • 16 cover and store pie at room temperature.

Easy, Chunky Chili

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 1 lb ground beef, browned
  • 1 (29 ounce) can tomato sauce
  • 2 (29 ounce) cans whole tomatoes, drained
  • 1 (40 ounce) can chili beans (i use hot chili beans)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 12 ounces fresh mushrooms (sliced)
  • 1 1/4 ounces chili seasoning mix (example ( mccormick)
  • 1 tablespoon black pepper

Recipe

  • 1 in a skillet, brown ground beef.
  • 2 add green peppers and onions and cook until onions are opaque.
  • 3 add mushroom and cook until they become slighly tender.
  • 4 combine all ingredients in a large pot, set stove to low and heat to preferred temperature.

Glazed Apple Lemon Ginger Pie

Ingredients

  • 2 pie crusts
  • 5 cups apples, sliced
  • 6 tablespoons butter, room temperature, sliced thin
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tablespoons brown sugar
  • 3 tablespoons lemon juice
  • 1/2 teaspoon powdered lemon
  • 1 teaspoon vanilla
  • 1 tablespoon vanilla powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon ginger
  • 1/4 teaspoon salt
  • glaze
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 tablespoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2-1 teaspoon powdered lemon

Recipe

  • 1 preheat oven 400 degrees.
  • 2 line a pie plate with one pie crust.
  • 3 cut second pie crust into 1 inch strips to be used for lattice topping.
  • 4 peel apples if desired and cut into small slices or pieces.
  • 5 place lemon juice, 2 tablespoons brown sugar, 1/2 teaspoon cinnamon and 1 teaspoon vanilla into ziploc bag and add apples tossing until thoroughly coated.
  • 6 spread apples onto cookie sheet into one layer and place in oven for 12-15 minutes stirring every three minutes to allow the lemon juice to cook off and apples to soften and caramelize.
  • 7 in a ziploc bag, combine and thoroughly mix sugar, brown sugar, lemon crystals, vanilla powder, cinnamon, nutmeg and ginger.
  • 8 set aside.
  • 9 pull caramelized apples out of oven and gently spoon into mixing bowl.
  • 10 add butter pieces and spiced sugar mix to the apples and gently toss to coat the warm apples until the butter melts .
  • 11 spoon coated caramelized apples into waiting pie crust.
  • 12 use the 1" pie crust strips to weave a lattice across the top of the apples.
  • 13 crimp crust around the outside rim.
  • 14 place the pie on a cookie sheet and set aside.
  • 15 in a small sauce pan over medium heat, combine the glaze ingredients together and cook until just boiling then remove from heat - about two minutes.
  • 16 using a silicone brush, paint the glaze across the top of the pie, coating the lattice evenly.
  • 17 set the pie into oven for 20 - 30 minutes or until the crust is golden brown.
  • 18 remove from oven and allow the pie to cool for at least two hours before slicing.

Rhubarb Slush From The Farmhouse

Ingredients

  • 8 cups water
  • 3 cups sugar
  • 1 (16 ounce) package frozen unsweetened strawberries
  • 8 cups diced rhubarb (fresh or frozen)
  • 1 (3 ounce) package strawberry gelatin
  • 1/2 cup lemon juice
  • ginger ale (plain or flavored)
  • carbonated lemon-lime beverage (like squirt or 50/50)

Recipe

  • 1 in a large pot (or dutch oven), bring water, sugar, berries & 'barb to a boil; reduce heat and simmer uncovered for 5-8 minutes (barb will be tender).
  • 2 press through a sieve; discard pulp.
  • 3 stir in gelatin and lemon juice until dissolved.
  • 4 transfer to a freezer container (ice-cream pail or cake pan); freeze, stirring occasionally, until firm.
  • 5 may be frozen for up to three months (or longer if you're living dangerously).
  • 6 to use as a punch: combine equal amounts of 'barb mixture and ginger-ale in a punch bowl or in several pitchers.
  • 7 for single serving: combine 1/2 cup 'barb mix with 1/2 cup mixer.

Chili Casserole

Ingredients

  • Servings: 9
  • 1 lb chili (i recomend homemade)
  • 1 (9 ounce) package jiffy cornbread mix
  • 2 cups rice
  • 4 cups water

Recipe

  • 1 preheat oven to 350°f.
  • 2 prepare rice in water.
  • 3 while rice is cooking, pour chili into an 8 x 8-inch baking dish.
  • 4 prepare cornbread as per box instructions.
  • 5 pour mix over chili.
  • 6 bake until cornbread is browned and a toothpick comes out clean from the middle.
  • 7 serve over rice.

Momma's Lemon Berry Bars

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 1 cup butter or 1 cup margarine
  • 2 cups all-purpose flour or 2 cups whole wheat flour
  • 1/2 cup powdered sugar
  • 2 1/8 cups sugar
  • 5 tablespoons flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 3/4 cup frozen raspberries (thawed)
  • 1/4 cup frozen mulberries (thawed)
  • 2 tablespoons lemon juice
  • 2 tablespoons berry juice (unsweetened from the thawed berries)

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a medium bowl mix crust ingredients.
  • 3 press into a jelly roll pan.
  • 4 bake crust at 350°f for 12 minutes.
  • 5 in a large bowl combine sugar, flour, baking powder; mix well.
  • 6 to the flour mixture add eggs, lemon juice, and berry juice; mix well.
  • 7 gently fold in berries,.
  • 8 pour the batter over the crust.
  • 9 bake in 350°f oven for about 25 to 30 minutes just until the top begins to turn light golden.
