Southwestern Fried Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken breast, cubed
  • 1 (10 ounce) package frozen corn, thawed
  • 1 small green pepper, chopped
  • 1 small onion, shopped
  • 2 teaspoons canola oil
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 cups uncooked instant rice
  • 1/2 shredded low-fat cheddar cheese

Recipe

  • 1 in a large nonstick skillet, sauté the chicken, corn green pepper and onion in oil until chicken juices run clear.
  • 2 stir in the broth, salsa, chili powder and cayenne; bring to a boil.
  • 3 add the rice.
  • 4 cover and remove from heat; let stand for 5 minutes.
  • 5 fluff with a fork.
  • 6 sprinkle with cheese.
  • 7 cover and let stand for 2-3 minutes for until cheese is melted.
