Chicken Marinade For Baked Chicken Breasts

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 2 chicken breasts
  • 2 tablespoons dijon mustard
  • 1/2 cup lemon juice
  • 1 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Recipe

  • 1 whisk the mustard, lemon juice, salt and pepper.
  • 2 slowly add the olive oil, in a steady stream, whisking all the time.
  • 3 put the chicken in a glass baking dish in a single layer and sprinkle salt and pepper over them.
  • 4 pour half the marinade over the chicken.
  • 5 marinate it in the refrigerator for 2 hours.
  • 6 preheat the oven to 350 degrees f.
  • 7 roast the chicken for about 35 minutes or until it is done.
  • 8 pour the remaining marinade over the chicken and cover the baking dish with aluminum foil.
  • 9 let the chicken rest for 10 minutes then serve.
