Chicken Marinade For Baked Chicken Breasts

Ingredients

- 2 chicken breasts
- 2 tablespoons dijon mustard
- 1/2 cup lemon juice
- 1 cup extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Recipe
- 1 whisk the mustard, lemon juice, salt and pepper.
- 2 slowly add the olive oil, in a steady stream, whisking all the time.
- 3 put the chicken in a glass baking dish in a single layer and sprinkle salt and pepper over them.
- 4 pour half the marinade over the chicken.
- 5 marinate it in the refrigerator for 2 hours.
- 6 preheat the oven to 350 degrees f.
- 7 roast the chicken for about 35 minutes or until it is done.
- 8 pour the remaining marinade over the chicken and cover the baking dish with aluminum foil.
- 9 let the chicken rest for 10 minutes then serve.
