Mexican Skillet Casserole

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 lb lean ground beef
  • 1 (15 1/4 ounce) can whole kernel corn (drained)
  • 1 (15 ounce) can ranch style beans
  • 1 (10 ounce) can rotel tomatoes
  • 1 1/2 cups instant rice (uncooked)
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1 (1 1/4 ounce) package taco seasoning mix

Recipe

  • 1 in skillet brown ground beef with taco seasoning and drain fat.
  • 2 pour instant rice in the skillet and stir to mix with the meat.
  • 3 add the corn, beans, tomatoes, and water, stir and cover and let simmer on low heat for 10 minutes.
  • 4 remove lid and cover with cheese replace lid and let stand for 5 minutes allowing cheese to melt.
  • 5 serve with a green salad.
