Ingredients

- 1 lb lean ground turkey
- 1 (1 1/4 ounce) package ortega taco seasoning
- 1/2 cup onion, chopped
- 2 (10 ounce) cans enchilada sauce
- 1 (16 ounce) jar salsa, pace chunky mild
- 1 (15 1/4 ounce) can corn
- 1 (15 1/4 ounce) can black beans
- 2 cups cottage cheese
- 2 eggs
- 8 spinach tortillas
- 2 cups mexican cheese, shredded
Recipe
- 1 preheat oven to 350°f.
- 2 brown turkey.
- 3 add seasoning packet, onion, enchilada sauce, salsa, corn and black beans.
- 4 simmer for 5-7 minutes.
- 5 combine cottage cheese and eggs.
- 6 spray 9 x 13 pan with cooking spray.
- 7 assemble lasagna in following order 1/3 meat mixture, enough tortillas to cover layer (will have to be ripped to fit), 1/3 cottage cheese mixture, 1/3 cheese, repeat.
- 8 bake at 350°f for 25 minutes.
- 9 let stand for 10 minutes before serving.
