Marsha's Version Of Erin's Mexican Lasagna

Ingredients

  • Servings: 12
  • 1 lb lean ground turkey
  • 1 (1 1/4 ounce) package ortega taco seasoning
  • 1/2 cup onion, chopped
  • 2 (10 ounce) cans enchilada sauce
  • 1 (16 ounce) jar salsa, pace chunky mild
  • 1 (15 1/4 ounce) can corn
  • 1 (15 1/4 ounce) can black beans
  • 2 cups cottage cheese
  • 2 eggs
  • 8 spinach tortillas
  • 2 cups mexican cheese, shredded

Recipe

  • 1 preheat oven to 350°f.
  • 2 brown turkey.
  • 3 add seasoning packet, onion, enchilada sauce, salsa, corn and black beans.
  • 4 simmer for 5-7 minutes.
  • 5 combine cottage cheese and eggs.
  • 6 spray 9 x 13 pan with cooking spray.
  • 7 assemble lasagna in following order 1/3 meat mixture, enough tortillas to cover layer (will have to be ripped to fit), 1/3 cottage cheese mixture, 1/3 cheese, repeat.
  • 8 bake at 350°f for 25 minutes.
  • 9 let stand for 10 minutes before serving.
