Grilled Pineapple Lamb Chops

Total Time: 21 mins Preparation Time: 5 mins Cook Time: 16 mins

Ingredients

  • Servings: 6
  • 6 lamb chops, 1-inch thick
  • 1 (20 ounce) can pineapple slices, in juice
  • 1/2 cup brown sugar
  • 1/2 cup italian dressing
  • 1/4 cup pineapple juice
  • 3 tablespoons soy sauce

Recipe

  • 1 drain pineapple, reserving 1/4 cup of the juice for marinade.
  • 2 combine all marinade ingredients; use 2/3 cup to marinate lamb, and reserve the rest for basting.
  • 3 let meat marinate for at least 3 hours.
  • 4 grill lamb chops on medium heat for 8 minutes on each side.
  • 5 grill pineapple for a total of 5 minutes.
  • 6 baste both lamb and pineapple with reserved marinade.
  • 7 place one or two pineapple slices on each lamb chop.
