Fiesta Baked Chicken

Ingredients

- 1 -1 1/2 lb boneless chicken breast
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/8 teaspoon garlic powder
- 1 large green bell pepper
- 1 large onion
- 1 (2 1/4 ounce) can sliced & pitted black olives, drained
- 1 cup salsa
Recipe
- 1 preheat oven to 350°f lightly spray a 13 x 9 inch baking dish with nonstick spray.
- 2 combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. mix well.
- 3 coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
- 4 place seasoned chicken in baking dish.
- 5 remove the seeds from the bell pepper. cut the bell pepper and onion into 2-3 inch strips.
- 6 arrange the vegetable strips and olives around chicken. spoon salsa evenly over veggies.
- 7 bake until chicken is cooked through and juices run clear; ~20-25 minutes.
- 8 serve with tortillas and rice.
