Fiesta Baked Chicken

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 -1 1/2 lb boneless chicken breast
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/8 teaspoon garlic powder
  • 1 large green bell pepper
  • 1 large onion
  • 1 (2 1/4 ounce) can sliced & pitted black olives, drained
  • 1 cup salsa

Recipe

  • 1 preheat oven to 350°f lightly spray a 13 x 9 inch baking dish with nonstick spray.
  • 2 combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. mix well.
  • 3 coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
  • 4 place seasoned chicken in baking dish.
  • 5 remove the seeds from the bell pepper. cut the bell pepper and onion into 2-3 inch strips.
  • 6 arrange the vegetable strips and olives around chicken. spoon salsa evenly over veggies.
  • 7 bake until chicken is cooked through and juices run clear; ~20-25 minutes.
  • 8 serve with tortillas and rice.
