Ingredients

- 1 lb potato, peeled and cut into bite sized pieces
- 1 small onion, diced
- 1 lb ham, cubed
- 8 large eggs, beaten
- 1 tablespoon safflower oil
Recipe
- 1 brown potatoes and onions in oil until potatoes are almost done. add ham and heat until potatoes are done cooking. pour eggs over all, stirring continuously until they are done.
- 2 serve hot!
