Super Easy One-dish Breakfast

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb potato, peeled and cut into bite sized pieces
  • 1 small onion, diced
  • 1 lb ham, cubed
  • 8 large eggs, beaten
  • 1 tablespoon safflower oil

Recipe

  • 1 brown potatoes and onions in oil until potatoes are almost done. add ham and heat until potatoes are done cooking. pour eggs over all, stirring continuously until they are done.
  • 2 serve hot!
