Southwestern Chicken Soup

Ingredients

- 1 (49 1/2 ounce) can chicken broth
- 1 (14 1/2 ounce) can crushed tomatoes, undrained
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 lb boneless skinless chicken breast, cut into 1/2inch cubes
- 1 large onion, chopped
- 1/3 cup fresh cilantro, minced
- 1 (4 ounce) can green chilies, chopped
- 1 garlic clove, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 3 cups frozen corn, thawed
- 1 cup mexican blend cheese, shredded
- baked corn tortilla chips
Recipe
- 1 in a large saucepan, combine the first 12 ingredients.
- 2 bring to a boil, reduce heat, cover and simmer for 1 hour.
- 3 add corn, cook 10 minutes longer.
- 4 top each serving with tortilla chips, sprinkle with cheese.
