Southwestern Chicken Soup

Ingredients

  • Servings: 8
  • 1 (49 1/2 ounce) can chicken broth
  • 1 (14 1/2 ounce) can crushed tomatoes, undrained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 lb boneless skinless chicken breast, cut into 1/2inch cubes
  • 1 large onion, chopped
  • 1/3 cup fresh cilantro, minced
  • 1 (4 ounce) can green chilies, chopped
  • 1 garlic clove, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 3 cups frozen corn, thawed
  • 1 cup mexican blend cheese, shredded
  • baked corn tortilla chips

Recipe

  • 1 in a large saucepan, combine the first 12 ingredients.
  • 2 bring to a boil, reduce heat, cover and simmer for 1 hour.
  • 3 add corn, cook 10 minutes longer.
  • 4 top each serving with tortilla chips, sprinkle with cheese.
