Southwestern Bean Soup

Total Time: 10 hrs 10 mins Preparation Time: 10 mins Cook Time: 10 hrs

Ingredients

  • 1 lb dry black beans, washed
  • 6 cups beef broth or 6 cups beef bouillon
  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 garlic clove, crush
  • 1 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon ground thyme
  • 2 ham hocks
  • 1 large tomato, diced
  • 1/3 cup sour cream

Recipe

  • 1 in crockpot combine all ingredients except sour cream and chopped tomato.
  • 2 cook on low about 10 hours or till beans are done.
  • 3 remove the hocks; cool and remove lean part of meat, discarding fat and bones.
  • 4 return lean part of meat to crockpot and reheat if needed.
  • 5 serve topped with sour cream and diced tomato.
