Southwestern Bean Soup

Ingredients
- 1 lb dry black beans, washed
- 6 cups beef broth or 6 cups beef bouillon
- 1 large onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 garlic clove, crush
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon ground thyme
- 2 ham hocks
- 1 large tomato, diced
- 1/3 cup sour cream
Recipe
- 1 in crockpot combine all ingredients except sour cream and chopped tomato.
- 2 cook on low about 10 hours or till beans are done.
- 3 remove the hocks; cool and remove lean part of meat, discarding fat and bones.
- 4 return lean part of meat to crockpot and reheat if needed.
- 5 serve topped with sour cream and diced tomato.
