Southwest Roll-ups

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 2 tablespoons salsa
  • 1 -2 jalapeno pepper, seeded
  • 1 clove garlic
  • 2 tablespoons chopped onions
  • 1 (16 ounce) can refried beans
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chopped fresh cilantro, , optional
  • 1 cup cubed, cooked chicken
  • 1 cup shredded cheddar cheese, , divided
  • 10 -12 6-inch flour tortillas
  • sour cream (optional)
  • additional salsa (optional)

Recipe

  • 1 place the first 8 ingredients and 1/2 cup cheese in a food processor; blend until smooth.
  • 2 spread evenly over tortillas.
  • 3 roll up and place seam side down in a greased 13-in.
  • 4 x 9-in.
  • 5 x 2-in.
  • 6 baking dish.
  • 7 cover and bake at 350 for 20 minutes or until heated through.
  • 8 sprinkle with remaining cheese; let stand until cheese is melted.
  • 9 serve with sour cream and salsa if desired.
