Rice Vegetarian Casserole / Hotdish

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 10 ounces chicken broth (or any broth)
  • 1 onion
  • 1 bell pepper
  • 8 ounces kernel corn (drain water in can first)
  • 1 jalapeno (if you like spice)
  • 1 cup rice (your choice of which kind of rice)
  • 1/2 cup milk
  • 8 ounces cream of celery soup
  • 1 teaspoon garlic salt (to taste)
  • 1 teaspoon pepper (to taste)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 chop all veggies into bite size pieces (add any veggies that you prefer).
  • 3 grease 9" x 9" pan with pam cooking spray.
  • 4 combine other ingredients with chopped veggies in a mixing bowl (or pan you will use), and mix until evenly stirred.
  • 5 put all ingredients in pan.
  • 6 optional - add shredded mozzarella cheese on top of ingredients.
  • 7 cook in oven, uncovered, for 40-50 minutes until rice is cooked.
